The amount of people requesting servers actually is alot. It's way more than a small team like mine is able to handle, which is why we're going to have an automated signup system for new server requests very soon. We're close to done with it, and you'll likely see something after the 1.7.2 update. Until then just sit tight. We're taking them in the order we receive them in.
